Sooji Halwa (Semolina Pudding)

A classic Indian dessert that’s simple to make and incredibly delicious.

Ingredients:

  • 1 cup sooji (semolina)
  • 1 cup sugar
  • 1/2 cup ghee (clarified butter)
  • 4 cups water
  • 4-5 green cardamom pods, crushed
  • A handful of cashew nuts and raisins (optional)

Instructions:

  1. Heat ghee: In a deep non-stick pan, heat the ghee over medium heat.
  2. Roast sooji: Add the sooji to the hot ghee and roast until it turns golden brown and fragrant. Stir continuously to prevent burning.
  3. Add water: Gradually pour in the water, stirring constantly to avoid lumps.
  4. Cook: Cover the pan and cook for about 10-15 minutes, or until the sooji is cooked and the water has evaporated.
  5. Add sugar: Stir in the sugar and cook for another 5-7 minutes, or until the sugar dissolves completely and the halwa thickens.
  6. Flavoring: Add the crushed cardamom pods for flavor.
  7. Garnish: For added richness, fry the cashews and raisins in a little ghee and sprinkle them over the halwa.

Tips:

  • For a richer flavor, use homemade ghee.
  • Adjust the sweetness to your taste by adding more or less sugar.
  • You can also add a pinch of saffron for color and flavor.
  • Serve hot or cold.
