Sooji Halwa (Semolina Pudding)

A classic Indian dessert that’s simple to make and incredibly delicious.
Ingredients:
- 1 cup sooji (semolina)
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 4 cups water
- 4-5 green cardamom pods, crushed
- A handful of cashew nuts and raisins (optional)
Instructions:
- Heat ghee: In a deep non-stick pan, heat the ghee over medium heat.
- Roast sooji: Add the sooji to the hot ghee and roast until it turns golden brown and fragrant. Stir continuously to prevent burning.
- Add water: Gradually pour in the water, stirring constantly to avoid lumps.
- Cook: Cover the pan and cook for about 10-15 minutes, or until the sooji is cooked and the water has evaporated.
- Add sugar: Stir in the sugar and cook for another 5-7 minutes, or until the sugar dissolves completely and the halwa thickens.
- Flavoring: Add the crushed cardamom pods for flavor.
- Garnish: For added richness, fry the cashews and raisins in a little ghee and sprinkle them over the halwa.
Tips:
- For a richer flavor, use homemade ghee.
- Adjust the sweetness to your taste by adding more or less sugar.
- You can also add a pinch of saffron for color and flavor.
- Serve hot or cold.
